Hugely simple recipe for these and SO quick to make – the golden rule is to touch them as little as possible with your bare naked (but very, very clean) hands! 90z self raising flour, three quarters of an ounce of butter, pinch of salt, tablespoon of sugar. Add in all the dry ingredients, and rub in the butter until there are no lumps. At this stage put in any grated cheese and caramelised fried onions you may have ready, or don’t bother if you don’t want to. Break a large egg into 6oz of milk, and add most of this to the mixture stirring with a large spoon until you have something like a dough. if it is too wet, add a little more flour. When it all holds together nicely, turn it out onto a floured board and roll it gently down to about half to three quarters of an inch thick WITHOUT KNEADING IT. Use a glass or cookie cutter to cut the scones out, and put them on a greased flat tin, which hopefully you have already warmed up in your oven (a hot oven is good, minimum is 225C). Brush the tops with a tiny amount of the left over milk and egg mix, or sprinkle a little more cheese on them. Stick the tray back in the oven and cook for 10 – 15 minutes, keeping a close eye on them. They are ready when they are golden brown and the smell is making you salivate….
